I started at Chipotle in 2001 as a restaurant manager in New York City, becoming one of the youngest multi-unit managers in the company at 25. The throughput systems I developed — increasing transaction counts by 60% — became the global standard post-IPO.

In 2008 I moved to London to lead Chilango Mexican Kitchen, guiding it to ZAGAT No. 1 Mexican Restaurant two years running and 15% unit-level EBITDA.

In 2013 I founded Juice Daddy UK, an independent consultancy working with Shake Shack, Bain Capital, and Boojum, alongside building Burger & Lobster's global franchise operation across Sweden, Kuwait, UAE, Saudi Arabia, Thailand, and Malaysia.

From 2018 to 2021 I served as Regional MD for Wingstop EMEA, growing turnover by 700% to £18 million across seven countries. Most recently I led two turnaround mandates for Sisban PE in London, reversing a £2 million deficit and driving +70% like-for-like growth at Covent Garden.

I'm currently based in London, consulting on international expansion and new site openings, and studying AI for Business at Wharton.
